We have been doing BBQ for the last 17 years, we started out mainly with Sausage making, jerky and turkey but really wanted to try some other forms of smoking so we eventually found enough info to try what we considered “Texas BBQ”. Needless to say after years of trial and error we have become very happy with our product. The name "Smoke Another One" actually came from all the times when even we weren't truly happy with our meat, we always said “Oh well, Smoke Another One!”
All the time we were practicing, we always had family and friends stop by to sample our meats and that is how the Catering got its start. Once you get a good name out people will be calling wanting great food and great service. We are still building that company but every year it gets bigger and bigger.
In January 2010 we came up with a new design of a smoker. With most of todays offset smokers with reverse flow you will have a hot spot by the fire box. We have eliminated this with a new flow design. This works even better than we could have imagined. We call it the “S” flow. We can hold our main chamber within 3 degrees from end to end and the vertical box will be right there or 20 degrees under, depending on how we want to run it. Our smoker has a 6’ stainless sink on it with hot and cold running water. It is totally self sufficient, meaning we carry our own water and waste holding tank. We have a onboard stereo with 4 speakers, a 12 volt power supply. There is two gas burners on it and also a Charcoal grill. There isn’t much we cannot do with our cooker.
